Established in 2007, by local Seth Cripe, Cortez Bottarga is making waves across the world.
Bottarga is Striped Gray Mullet roe which has been salt-cured and sun-dried. The roes are carefully harvested intact and sprinkled with salt. They are then pressed and dried to give them a solid, flat shape. Considered a delicacy throughout the world, it is sometimes referred to as the Mediterranean caviar.
Cortez Bottarga has been featured on the Today Show, where it was referred to as the secret to Italian restaurants.
